Ingredients:
1 can black beans, drained
1 cup halved cherry tomatoes
3/4 cup frozen corn, thawed (or canned, drained)
1/4 cup finely chopped purple onion
2 yellow, red, or orange peppers, chopped
2 cups cooked quinoa, cooled
2 avocados, diced
1/4 cup crumbled feta or goat cheese
1/3 cup roughly chopped parsley, cilantro, or basil
1/4 cup olive oil
Juice of 2 limes
1 teaspoon each of chili powder, smoked paprika, and garlic powder
Pinch of salt and pepper, or more to taste
