Oat bran is the outer layer of the oat groat just beneath the outer hull. Oat bran has the same beneficial nutrients as steel cut and whole oats yet it has more fiber and protein. When cooked or soaked, it has a creamy texture many people enjoy. Soaking oat bran overnight with other nutrient-packed ingredients makes for a delicious and easy breakfast or afternoon snack.
Makes 2 servings
1 cup dairy or non-dairy milk
1/2 cup oat bran
1 cup fresh, frozen or dried blueberries, with extra for garnish if desired
2 T chia seeds
1 T maple syrup
1 T shredded unsweetened coconut, with extra for garnish if desired
¼ Tsp vanilla
½” grated fresh ginger OR ⅛ Tsp ground dry ginger
Pinch of salt
Place all ingredients except garnish in a container you can cover, stir to combine, cover, and refrigerate overnight. When ready to eat, transfer to a bowl and garnish with blueberries and shredded coconut. Enjoy!
